Spinach and blueberry omelette with a hint of cheese - a great idea for breakfast.

The omelette disappeared so quickly after the photo shoot that we miraculously managed to film it ;)

Composition:
Eggs 4pcs.
Mozzarella 50g
Blue cheese (gorgonzola/blue/other) 50g
Young spinach, a dozen or so leaves
Blueberries 30g (we used 75% fruit, available in organic stores at higher % + xylitol)
Blended oat flakes 30g
Salt

Preparation:
Crack the eggs into a bowl, add the oats, beat everything until smooth, then add the spinach leaves and mix again, season with salt and pour into a frying pan sprayed with PAM (optionally, dry Teflon) and fry on all sides.

We flip the omelette when it moves freely when we shake the pan. After flipping it to the other side, we arrange finely chopped cheeses on one of the halves, reduce the heat and fry until they melt. On a plate, we pour blueberries over everything and fold it in half.
